Emulsion
a mixture in which one liquid, termed the dispersed phase, is uniformly distributed (usually as minute globules) in another liquid, called the continuous phase or dispersion medium. In an oil-water emulsion, the oil is the dispersed phase and the water the dispersion medium; in a water-oil emulsion, the reverse holds. A typical product of oil wells, water-oil emulsion also is used as a drilling fluid.

Emulsion
An emulsion is a mixture of two immiscible (unblendable) substances. One substance (the dispersed phase) is dispersed in the other (the continuous phase). Examples of emulsions include butter and margarineespressomayonnaise, the photo-sensitive side of photographic film, and cutting fluid for metal working. In butter and margarine, a continuous liquid phase surrounds droplets of water (water-in-oil emulsion). Emulsification is the process by which emulsions are prepared.
